Blog Jam Copic Give-away

Several weeks ago, Sharon mentioned that she was going to make her fabulous Pineapple Jam. I got to thinking about the raspberries that were wasting away on the vines and the peppers still in my garden. So that afternoon, I went out and picked my berries and peppers for Raspberry Pepper Jam and made it that night.  Here is the recipe that I used, and I just added 6 diced jalapeno peppers (seeds removed) to the cooking mixture. Now most folks would like this jam over a brick of cream cheese, and I’ll admit, that’s pretty good. But here’s my very favorite thing to do with Raspberry Jam (homemade or store-bought, with or without the peppers):

I don’t know what you want to call this cracker spread, and I admit it doesn’t sound very appetizing but we call it G*O*O*D. It’s my favorite thing to take to a social event when I’m ‘in a jam‘ and need something quick. Generally, I have everything on hand, and it is so very tasty.

Cracker Spread 

  • 1 cup grated sharp cheddar cheese
  • 4 green onions sliced
  • 2 Tbls. Hellman’s Mayo (I would never recommend Miracle Whip ;), but especially not in this recipe. The sharp cheddar just begs to be paired with the distinct Hellman’s flavor.)
  • 4 Tbls. Raspberry Jam

Mix cheddar cheese, green onions and mayo in a bowl and stir. Spread onto serving dish. Cover with layer of raspberry jam, being careful not to mix the 2 layers. I usually take the jam with me and add it just before serving.   Serve with your favorite cracker.

Something about this mixture of sweet & salty & sharp cheddar. It is *so* good. 🙂

I found this stretchy ribbon at Archiver’s a few weeks ago. It was easy to single knot and secure with a pin. The lid topper was stamped with Flora Backgrounder from CHF, in Lady Bug Red Momento ink from Tsukineko. Then, I squished the lid topper into my new VersaMark Dazzle pad – coating the floral image with Champagne flavor,  I mean, sparkle.  The coating of the VersaMark gives the stamped topper a little gold flecked sparkle and a shiny coating. It reminds me of a piece of old oil cloth that my grandma might have used for a table covering. Love the ingenuity of Tsukineko to add shimmer and frost to their essential VersaMark pad.
